Easy Quiche

Prepare to conquer brunch! This recipe is painfully easy, adaptable, forgiving, versatile, kid-friendly, crowd pleasing, reheatable, make ahead-able, storable, the list goes on. AND it tastes good- picky eaters always ask for seconds!

Easiest Quiche Ever

Directions:

- Preheat oven to 360 degrees F

- Prepare your pan; spray/grease bottom generously. Note that recipe quantities are for a standard pie plate or 9 inch square pan, but can very easily be doubled for a casserole dish to please a crowd

- In a bowl, whisk together thoroughly:

• 1 C milk • 4 eggs • 1/4 tsp salt

• Pepper to taste • A few shakes of parsley (optional. I like it for color & teaching my kids to eat green stuff)

• 1/2 C baking mix such as Bisquick (GF version works)

- After whisking all of the above together thoroughly, momentarily set aside and turn your attention to your prepared, greased baking dish:

- Layer whatever meat (ham, sausage crumbles, etc.) if desired down at the bottom of your dish as the first layer. Follow with your second layer, cheese, if desired. - Continue to sprinkle fillings/adding layers as desired. Some ideas: mushroom, bell peppers, scallions, onions, spinach, shredded potato/hash browns, etc... go crazy if you want!

- It’s also nice to be able to keep this SUPER simple- a family favorite; ham + cheese. Another go-to is taco meat (ground turkey with taco seasonings) + cheddar cheese. Sometimes with green onions; but always served topped with salsa or even avocado. Anyway, the possibilities are endless.

- Next: Gently pour the prepared egg mixture over layered fillings.

- Bake uncovered for 35- 45 min until set and top is just golden (I usually check at 30 min and then peek in every 5 min after that; for my oven done-ness really seems to vary according to which pan I use)

- Enjoy! Stores and reheats well!
