Double Chocolate Banana Bread


Okay. This is really just a variation of my standard banana bread recipe (which is kind of the best ever, which I say only because I've been told so by many), but- CHOCOLATE.

So we’ll go ahead and start here.


When I bake, vanilla and cinnamon get dumped into just about everything. These are standing bulk purchase items for me. These are best estimated amounts- I usually go pretty heavy handed.


Before you start...

- Don’t roll your eyes (or roll them, I’m not offended); but I promise there really are a few tips for perfect banana bread:

* Do NOT overmix! Less is more. Gently love that batter!

* Don’t let your batter sit out: have your oven preheated and ready to go and get that goodness into the oven!

* Random helpful banana factoid— they’re much easier to peel from the bottom.


INGREDIENTS:

- 4 ripe, mashed bananas

- 1.5 C AP Flour

- 1 C sugar

- 1 egg

- 1 tsp baking soda

- 1 tsp salt

- 1/4 C butter or coconut oil, melted

- 1/2- 1 tsp cinnamon

- 2-3 tsp vanilla

- 3 Tbsp cocoa powder

- 3/4 C semi sweet chocolate chips

- 1/4 C (or more, depending on your craving) mini chocolate chips

(Optional: additional chocolate chip minis for sprinkling on top)



DIRECTIONS:

- Preheat oven to 320 degrees F

- Grease a 9 x 5 loaf pan; or two loaf pans- my preference is to make two smaller loaves with this recipe but you can easily make one larger (for two smaller- you can use smaller loaf pans or 9x5 shallowly filled)

- Measure all ingredients except chocolate chips into a large bowl.

- Mix until just combined.

- Add chocolate chips and fold in gently until just combined.

- Pour or divide batter into greased, prepared loaf pan(s).

- Optional: I like to sprinkle a little granulated sugar on top and/or additional chocolate chip minis (pretty food tastes even better sometimes!)

- Bake at 320 deg F for 35-45 minutes for two loaves; 45-65 minutes for one large loaf. I tend to check doneness frequently; when edges are just darkened and middle is firm when giving the pan a jiggle, loaf ( loves are) is done.

- Enjoy! Freezes well, refrigerates/keeps well, great warm or cold... just plain good!
